Herb Vinaigrette - Recipe


This simple Vinaigrette recipe uses fresh Herbs and provides a great combination of flavors that can be used not only on your favorite Salads but on almost any meat.

INGREDIENTS

3              tbs.        Red Wine vinegar
3              tbs.        EVOO
3              tbs.        Water
2              tbs.        Lemon Juice
3              tbs.        Red Onion, finely Chopped
3              tbs.        Parsley, fresh, chopped finely
3              tbs.        Mint, fresh, finely chopped
2              tbs.        Thyme, fresh, finely chopped
1              tbs.        Rosemary, finely chopped
2              tbs.        Spicy Mustard
1              tsp.        Black Pepper, rough ground
1/2         tsp.        salt

DIRECTIONS:

1.       Combine the Vinegar, EVOO, Water, Lemon Juice, and Mustard in a bowl and blend together well.
2.       Add the remaining ingredients; the Herbs and the Salt and Pepper, and blend together well.
3.       Let sit for several hours to allow the flavors to merge, then use.

NOTE: Of course, this recipe lends itself to your experimenting with the fresh Herbs used. You can easily replace some of these with your own favorites.

Mustard and Chive Vinaigrette – RECIPE

This Vinaigrette has a very nice flavor for use on Salads, of all kinds, and it also goes well with strong Fish dishes, such as Salmon.

We got the recipe from a fellow camper who served it to us one night in Arizona.
Her husband was diabetic and had a heart problem, and she said that it was Low-Fat, Low-Carb and Low-Sugar. 
She wrote down the recipe for us, and we evolved it, over time, to this.

INGREDIENTS:

4              tbs.        Red Wine Vinegar
2              tbs.        Spicy Mustard
2              tbs.        Water
1              tbs.        Honey
4              tbs.        Chives (greens, chopped )
2              tbs.        EVOO (Olive Oil)
1              tsp.        Dry Mustard
1              tsp.        Black Pepper, Rough Ground
1/2         tsp.        Salt, Kosher
1              clove     Garlic, minced

DIRECTIONS:

1.       Combine the Vinegar, Water, Mustard and Honey in a bowl and blend together well.
2.       Add the Oil, slowly and blend into the mixture.
3.       Add the Chives, Garlic, Salt, Dry Mustard, and Black Pepper, and then blend the mixture together well.
4.       You can use this Vinaigrette right away, or let it sit for a few hours to allow the flavors to combine.
5.       Just shake and use this Vinaigrette.
NOTE: This recipe yields around 2/3-cup of Vinaigrette dressing, and a serving size is 1-tablespoon

GRILLED LEMON OIL Dressing - Recipe


FAST and EASY RECIPE: When you need a nice light Lemony Oil dressing for use on a salad, or over some grilled chicken, etc. this one is hard to beat. 
It is an easy recipe to make from some common ingredients that you probably have just lying around.
And, you will find that it is very tasty, with the combination of the Lemon and Charred flavors.

INGREDIENTS:
 3     large     Lemons
 1     cup        EVOO (Extra Virgin Olive Oil
 2     tsp.        Kosher Salt

DIRECTIONS
1-    Capture and save about 2-tsp of the zest of the Lemons.
2-    Split the Lemons lengthwise, then cut the halves into slices.
3-    Grill the Lemon slices until they are charred on both sides.
4-    Place the Lemons in a coarse strainer, and use a wooden spoon to press all of the juice from the lemons.
5-    Place the Juice into a bowl, and then add the Olive Oil and the Salt, stirring until all of the ingredients are mixed well.
6-  Add the zest to the mixture and blend well before use.

STORAGE:
Place the mixture into a squeeze bottle for use.

FRENCH DRESSING (Kind of) - Old Recipe


OK, this is another old recipe that we have used occasionally over the years.
With the many manufacturers brands of Salad Dressings that are on the market today, we have all become used to that STANDARD taste that they all attempt to provide to the consumer.
This recipe, is KIND OF the same flavor.
It tastes somewhat different, but the bottom line is that it has a very nice flavor and makes a really good Salad Dressing. Try it, or not! I think is a nice and different dressing that is both quick and easy to make and it requires absolutely NO COOKING!

INGREDIENTS:

1        Can          Tomato Soup (10-3/4 ounce size)
1/2      cup          Sugar
3/4      cup          Vinegar ( a mild variety)
1         tsp.           Worcestershire Sauce
1         tsp.           Dry Mustard
2-1/2  cups          Vegetable Oil (your choice, original recipe used Crisco Oil, I use EVOO)
1         tsp.            Salt
1/2      tsp.            Black Pepper, fine grind
2         tbs.            Sweet Pickles, finely chopped (optional)

DIRECTIONS:

Mix all of the ingredients together until well blended ( use a Blender if desired), and serve chilled or at room temperature
