INDIAN FOOD - Mango LASSI - Beverage recipe

This recipe for a cooling and fresh beverage made from the healthy and delicious MANGO is by a fellow Hubber, Indian Chef.

I have made something similar myself and the Mango does make a great SMOOTHIE, as we call them here in the States.

I recommend that you give this one a try.

NOTE : For those of you that are not regular consumers of the Mango, take care in how you handle them. I found out the hard way that the Mango has a chemical on it's skin that is a skin irritant to people. I ended up at my Doctor after I moved to Florida where the Mango is abundant, with puffy eyelids.
I would peel a Mango, and not wash my hands and then I would end up with red and puffy areas on my face where I had touched myself.
So, wash your Mango, Handle and Peel it wearing gloves if possible and dispose of the skin. Then wash your hands thoroughly, again, and make your Smoothie!

Mustard and Chive Vinaigrette – RECIPE

This Vinaigrette has a very nice flavor for use on Salads, of all kinds, and it also goes well with strong Fish dishes, such as Salmon.

We got the recipe from a fellow camper who served it to us one night in Arizona.
Her husband was diabetic and had a heart problem, and she said that it was Low-Fat, Low-Carb and Low-Sugar. 
She wrote down the recipe for us, and we evolved it, over time, to this.

INGREDIENTS:

4              tbs.        Red Wine Vinegar
2              tbs.        Spicy Mustard
2              tbs.        Water
1              tbs.        Honey
4              tbs.        Chives (greens, chopped )
2              tbs.        EVOO (Olive Oil)
1              tsp.        Dry Mustard
1              tsp.        Black Pepper, Rough Ground
1/2         tsp.        Salt, Kosher
1              clove     Garlic, minced

DIRECTIONS:

1.       Combine the Vinegar, Water, Mustard and Honey in a bowl and blend together well.
2.       Add the Oil, slowly and blend into the mixture.
3.       Add the Chives, Garlic, Salt, Dry Mustard, and Black Pepper, and then blend the mixture together well.
4.       You can use this Vinaigrette right away, or let it sit for a few hours to allow the flavors to combine.
5.       Just shake and use this Vinaigrette.
NOTE: This recipe yields around 2/3-cup of Vinaigrette dressing, and a serving size is 1-tablespoon

Total Fat-             1.8 g
Sat. Fat-               0.3 g
Cholesterol-         95.3 mg
Carbohydrates-   1.3 g
Fiber-                  0.1 g
Sugars-               1.1 g
Protein-               0 g

Summer Soup - RECIPE

Summer Soup                                       Soups & Stews
Ingredients:
2          large           Potatoes, chopped
2          medium     Onions, chopped
3          medium     Carrots, chopped
2          slices           Bacon, fried and chopped
1          can             Chicken broth
2          tsp.              Salt
1          tsp.              Pepper
1          tsp.              Garlic Powder
1/2      tsp               Cayenne
1          tsp.              Paprika
1          quart          Skim Milk
Directions:
-          Place the chopped vegetables into a pan and cover with water.
-          Bring to a Boil and add the Salt, Pepper, Bacon and other spices.
-          Cook until the vegetables are tender.
-          Place the mixture into a blender and Puree.
-          Add the Chicken Stock and blend together well with a spoon, while seasoning to taste.
-          Chill the mixture in the fridge.
-          When ready to serve add ½ cup of skimmed milk per serving, blending by hand (use a whisk).
-          Top each serving with a Lemon Slice and serve.
